Here is the magic: I dug into the code of Papa's Taco Mia and found the code file, tacoGame/data/customers/customerTohru, the file had the line of code, this.customerName = "Tohru", which displays the name of the customer name on the counter and the customer list in the pause menu. and I changed it to this.customerName = "Bertha" and the game now thinks that this customer's name is Bertha.
This was possible via JPEXS Free Flash Decompiler.
