Here is the magic: I dug into the code of Papa's Taco Mia and found the code file, tacoGame/data/customers/customerTohru, the file had the line of code, this.customerName = "Tohru", which displays the name of the customer name on the counter and the customer list in the pause menu. and I changed it to this.customerName = "Bertha" and the game now thinks that this customer's name is Bertha.
This was possible via JPEXS Free Flash Decompiler.

Bill is blatantly described as a possessed doll with zero elaboration on which of the many he is, Mario and Luigi only describe Tohru's hat and nothing more, and Bertha implies nobody on the team has watched Friday the 13th.
This is also why the edits on BnB's article were indeed helpful in terms of their physical looks, but NNNNNNNNNNNNOPE! You mustn't ever elaborate!
